Recipe for Cherry Clafoutis from Farm Boy

Farm Boy shared with us this elegant yet simple recipe for Cherry Clafoutis, a classic French dessert that’s as beautiful as it is delicious. Sweet cherries are baked in a light, custard-like batter until golden and tender, then finished with a dusting of icing sugar. Perfect for entertaining or a special family treat, this clafoutis is a delightful way to showcase seasonal fruit.

Ingredients:

  • 3 ½ – 4 cups sweet or tart cherries stemmed, pitted, and halved
  • 2 Tbsp unsalted butter
  • 3 Farm Boy™ Omega-3 Eggs
  • 2/3 cups Farm Boy™ Organic Whole Milk
  • 2/3 cup whipping cream or half and half
  • ½ cup Farm Boy™ All Purpose Flour
  • ½ cup + 2 Tbsp granulated sugar divided
  • 1 tsp vanilla extract
  • ½ tsp almond extract
  • pinch salt
  • icing sugar for dusting

Directions:

  1. Preheat oven to 375°F.
  2. Place butter in a 10” shallow baking dish or cast-iron pan and place in the oven to melt. Swirl so it coats the bottom and sides of pan. If using a cast-iron pan, you can also do this on top of the stove.
  3. Remove pan from oven and arrange cherries in a single layer in the pan.
  4. In a blender jar, combine Farm Boy™ Omega-3 Eggs, Farm Boy™ Organic Whole Milk, whipping cream, Farm Boy™ All Purpose Flour, ½ cup sugar, vanilla and almond extracts, and salt. Blend until completely smooth.
  5. Pour the batter slowly over the cherries in the pan and bake for 20 minutes. Remove from oven and sprinkle the remaining 2 tablespoons of sugar over the top.
  6. Place back in the oven and bake until just set and the top is golden brown, about another 18-22 minutes. A tester inserted in the centre should come out clean, but the centre will be a bit soft.
  7. Let cool on a rack for at least 30 minutes, then dust with icing sugar and serve.

* Clafoutis are simple to make, delicious, and customizable with other fruits like berries, peaches, apricots, or nectarines.

* Use a shallow baking pan for this dessert, and depending on the size of your cherries, you may need the larger quantity. Just make sure the bottom of the pan is full.

* Serve warm or at room temperature, dusted with icing sugar or a scoop of Farm Boy™ Ice Cream.
