Recipe for Teriyaki Tofu and Udon Noodle Stir Fry

Teriyaki Tofu and Udon Noodle Stir Fry is a quick, satisfying meal featuring chewy udon noodles, protein-rich tofu, and vibrant veggies in a savoury teriyaki sauce. We love the chewy texture of udon noodles, but if you prefer, you can substitute them with rice noodles or even spaghetti. Adding tofu makes this plant-based dish more nutritious and wholesome, but you can swap the tofu for chicken, turkey, pork, or beef. Feel free to use any type of cabbage or Asian greens – we opted to use the tender leaves and stems of gai lan. Tofu absorbs more flavour as it marinates, so if you have time, you can do that overnight. This is an easy, quick and delicious weeknight dinner!

Teriyaki Tofu and Udon Noodle Stir Fry

Ingredients:

  • 1 cup Farm Boy™ Teriyaki Cooking Sauce divided
  • 1 pack (350 g) firm tofu cut into 1/2″ dice
  • 1 pack Farm Boy™ Udon Noodles
  • 3 Tbsp vegetable oil divided
  • 1 and 1/2 cups sliced mushrooms
  • 1 cup sliced bell pepper
  • 1 cup shredded carrot
  • 3 cups shredded Asian greens such as Gai Lan
  • 1/2 cup Farm Boy™ Organic Shelled Edamame
  • 1/4 cup water
  • 3 green onions thinly sliced
  • 1 Tbsp toasted sesame seeds plus more for garnish
  • lime wedges for serving

Directions:

  1. Place tofu in a in a resealable bag. Add 1/4 cup Farm Boy™ Teriyaki Cooking Sauce and mix it in. Marinate, covered, for at least 1 hour and up to overnight.
  2. Blanch Farm Boy™ Udon Noodles in boiling water, separating them gently, for 1-2 minutes. Drain.
  3. Remove tofu from marinade, scraping off as much as possible. Reserve marinade.
  4. Heat 1 Tbsp Farm Boy™ Vegetable Cooking Oil in large skillet or wok over medium-high heat and cook tofu, tossing gently, until browned on all sides, about 6 minutes. Be careful as it will splatter once it hits the hot pan. Remove from skillet.
  5. Add remaining 2 Tbsp Farm Boy™ Vegetable Cooking Oil to pan and stir fry mushrooms, bell pepper, and carrots until tender, about 5 minutes.
  6. Add gai lan and cook 2 minutes. Stir in Farm Boy™ Udon Noodles, tofu, Farm Boy™ Shelled Edamame and the reserved marinade, plus 3/4 cup remaining Farm Boy™ Teriyaki Cooking Sauce and 1/4 cup water. Cook, tossing constantly, until noodles are coated in sauce, about 2-3 minutes.
  7. Remove from heat and stir in green onions and 1 Tbsp sesame seeds.
  8. Serve, garnished with more sesame seeds and lime wedges.
