Farm Boy shared with us this Butter Chickpeas, a flavourful, vegetarian take on classic butter chicken, featuring tender chickpeas simmered in a spiced tomato and creamy sauce. Served with rice or quinoa and warm naan, it’s a comforting, easy-to-make meal perfect for weeknights. The dish develops even deeper flavours when made ahead, making it ideal for meal prep.

Butter Chickpeas

Ingredients:
- 2 Tbsp Farm Boy™ Vegetable Cooking Oil or butter
- 1 cup diced onion
- 1 Tbsp peeled and minced ginger
- 1 jalapeño chili pepper minced
- 2/3 cup Farm Boy™ Crushed Tomatoes
- 2 cans Farm Boy™ Organic Chickpeas drained and rinsed
- 1 container Farm Boy™ Butter Chicken Cooking Sauce
- 1 ½ cups water
- 1 tsp Farm Boy™ Organic Paprika
- salt and pepper to taste
- ¼ cup chopped cilantro
- 2 cups cooked rice or Farm Boy™ Organic Mixed Quinoa
- Farm Boy™ Flame Baked Whole Wheat Naan for serving
- lime wedges for serving
Directions:
- In a large skillet, heat Farm Boy™ Vegetable Cooking Oil or butter over medium-high heat.
- Add onion, ginger, and jalapeño chili and cook until vegetables are translucent, about 5 minutes. Add Farm Boy™ Organic Paprika and cook for another 2 minutes.
- Add Farm Boy™ Crushed Tomatoes, Farm Boy™ Organic Chickpeas, Farm Boy™ Butter Chicken Cooking Sauce, and water and bring to a simmer.
- Add salt and pepper to taste and simmer over low heat, uncovered, for 20-25 minutes, stirring every so often. Mixture will reduce somewhat. If it reduces too much, add a bit of water to loosen.
- Adjust seasoning as needed and add cilantro.
- Serve with rice, quinoa, or Farm Boy™ Organic Mixed Quinoa, Farm Boy™ Whole Wheat Naan, and lime wedges.
