Cheesy Bacon Egg Bites
Serves: 12
Ingredients:
- 2 cups (500 mL) Canadian Cheddar cheese
- 1 cup (250 mL) Canadian cottage cheese
- 1 cup (49 g) fresh spinach, chopped
- 6 slices (91 g) bacon, cooked and chopped
- 1 cup (250 mL) red pepper, chopped
- 1/2 cup (125 mL) green onions, chopped
- 1/2 cup (125 mL) jalapeños, chopped (optional)
- 6 large eggs, whisked
- Salt and pepper to taste
Directions:
- Preheat the oven to 375°F (190 °C). In a large bowl, stir together all the ingredients. Divide the mixture evenly into a 12-cup silicone muffin pan.
- Place the muffin pan into a deep baking dish and fill with water until it reaches just below the rim of the muffin pan. Place it on the middle rack of the oven.
- Bake for 20 minutes or until the egg bites reach your desired consistency.
