Crispy on the outside and loaded with savoury ingredients inside, it’s perfect for busy mornings or meal prep lunches.

High Protein Breakfast Wrap

Ingredients:
- 1 cup Armstrong High In Protein Marble Cheddar Shredded Cheese
- 3 or 4 slices turkey bacon, diced
- 1 bell pepper, diced
- 2 cups egg whites
- 1 tbsp avocado oil
- 2 cups baby spinach leaves
- 1 avocado, sliced
- Salt and freshly ground pepper to taste
- 4 large whole wheat tortillas
Directions:
- Heat a large nonstick skillet over high heat. Add the diced turkey bacon, bell peppers and olive oil. Cook over high heat for 3 to 4 minutes, or until the bacon is crispy. Transfer to a bowl, wipe the skillet clean, and return it to the heat to cook the egg whites.
- In a large bowl, whisk together the egg whites and salt. Pour 1 tablespoon of olive oil into the skillet and heat for 1 minute. Add the egg white mixture, spinach, and 1/2 cup of Armstrong shredded cheese. Cook over medium heat, stirring frequently, for 2 minutes or until they begin to set. Transfer to another bowl and wipe the skillet again.
- Place each tortilla on a flat, clean surface, top with scrambled eggs, the veggies, sliced avocado, and cheese. Fold them into tight burritos. Brown them for 1 to 2 minutes on each side in a skillet, until crispy and golden brown. Serve hot with your favourite salsa.
