Ingredients:

  • ½ cup Farm Boy™ Organic Plain Greek Yogurt
  • 2 tsp Farm Boy™ Garlic Flowers
  • 1 Tbsp Farm Boy™ Harissa Seasoning
  • 1 tsp Farm Boy™ Organic Turmeric
  • 1 tsp Farm Boy™ Organic Paprika
  • ½ tsp Farm Boy™ Ground Coriander
  • zest and juice of 1 large lime
  • 1 Tbsp extra virgin olive oil
  • salt and pepper to taste
  • 650 g skinless salmon cut into 1″ cubes
  • Farm Boy™ Flame Baked Naan to serve
  • sliced tomatoes to serve
  • finely sliced red onion to serve
  • cilantro for garnish
  • Farm Boy™ Organic Plain Greek Yogurt or Farm Boy™ Tzatziki to serve

Directions:

  1. Preheat oven to 450°F (convection if you have it). Line a sheet pan with parchment paper.
  2. For the yogurt marinade: In a medium bowl, combine Farm Boy™ Organic Plain Greek Yogurt, Farm Boy™ Garlic Flowers, Farm Boy™ Harissa Seasoning, Farm Boy™ Organic Turmeric, Farm Boy™ Organic Paprika, Farm Boy™ Ground Coriander, lime zest and juice, extra virgin olive oil, salt, and black pepper.
  3. Add salmon and toss until coated in the marinade. Let it rest for 15 minutes.
  4. Spread the salmon pieces on the prepared sheet pan and roast for 12-14 minutes until cooked through, browned on the edges, and internal temperature reaches 158°F. (If you want a bit more char, place under the broiler for 1-2 minutes longer.)
  5. Remove from oven and rest for 5 minutes. Serve with Farm Boy™ Flame Baked Naan, tomatoes, red onion, cilantro, and Farm Boy™ Organic Plain Greek Yogurt or Farm Boy™ Tzatziki.

* This recipe has a slight kick from the harissa, if you prefer it milder, reduce the amount to 1 tsp.
