Hearty Garlic Butter Shrimp Shepherd’s Pie

Serves: 4

Ingredients:

  • 1 ½ lb potatoes, peeled
  • 4 tbsp local butter, divided
  • 2 cups local 35% whipping cream, divided
  • 3 cloves garlic, chopped
  • ⅓ cup white onion, chopped
  • 2 tbsp flour
  • ½ leeks, sliced
  • ½ cup celery, chopped
  • 1 tsp garlic powder
  • 1 tsp chili flakes
  • 1 1/2 lb shrimp, shelled and chopped
  • 2 cups shredded local white cheddar
  • Salt and pepper to taste

Directions:

  1. Preheat the oven to 400°F.
  2. Boil the potatoes in a large pot of salted water until tender. Drain, then mash with ½ cup whipping cream and 2 tbsp butter until smooth and creamy. Season with salt and pepper to taste. Cover and set aside.
  3. In a large skillet over medium heat, melt the remaining 2 tbsp butter. Add the garlic, onion, leeks, and celery. Cook for 3–5 minutes, or until softened.
  4. Sprinkle in the flour and stir until the vegetables are coated. Slowly stir in the remaining 1 ½ cups whipping cream. Add the garlic powder and chili flakes. Simmer for 2–3 minutes, or until slightly thickened.
  5. Stir in the chopped shrimp and cook for 2–3 minutes, just until the shrimp begins to turn pink. Season with salt and pepper to taste, then remove from heat.
  6. Divide the shrimp cream sauce evenly among 4 medium ramekins or place in a 8×8 inch baking dish. Top with mashed potatoes, then sprinkle with cheese
  7. Bake for 15 minutes, or until the sauce is bubbling and the cheese is melted and lightly golden.
