Hearty Garlic Butter Shrimp Shepherd’s Pie

Ingredients:
- 1 ½ lb potatoes, peeled
- 4 tbsp local butter, divided
- 2 cups local 35% whipping cream, divided
- 3 cloves garlic, chopped
- ⅓ cup white onion, chopped
- 2 tbsp flour
- ½ leeks, sliced
- ½ cup celery, chopped
- 1 tsp garlic powder
- 1 tsp chili flakes
- 1 1/2 lb shrimp, shelled and chopped
- 2 cups shredded local white cheddar
- Salt and pepper to taste
Directions:
- Preheat the oven to 400°F.
- Boil the potatoes in a large pot of salted water until tender. Drain, then mash with ½ cup whipping cream and 2 tbsp butter until smooth and creamy. Season with salt and pepper to taste. Cover and set aside.
- In a large skillet over medium heat, melt the remaining 2 tbsp butter. Add the garlic, onion, leeks, and celery. Cook for 3–5 minutes, or until softened.
- Sprinkle in the flour and stir until the vegetables are coated. Slowly stir in the remaining 1 ½ cups whipping cream. Add the garlic powder and chili flakes. Simmer for 2–3 minutes, or until slightly thickened.
- Stir in the chopped shrimp and cook for 2–3 minutes, just until the shrimp begins to turn pink. Season with salt and pepper to taste, then remove from heat.
- Divide the shrimp cream sauce evenly among 4 medium ramekins or place in a 8×8 inch baking dish. Top with mashed potatoes, then sprinkle with cheese
- Bake for 15 minutes, or until the sauce is bubbling and the cheese is melted and lightly golden.
