Corn Fritters with Chimichurri Yogurt Sauce

Ingredients:

Fritters:

  • 2 Farm Boy™ Omega 3 Eggs
  • 2 1/2 cups fresh corn kernels about 3 medium ears
  • 2 green onions minced
  • 1 jalapeño pepper minced (and seeded for less heat)
  • 3/4 cup Farm Boy™ Fiesta Blend Shredded Cheese (280 g)
  • 2 Tbsp Farm Boy™ Organic 3.8% Whole Milk (946 ml)
  • 1/2 cup all-purpose flour
  • 2 Tbsp Farm Boy™ Cornstarch (454 g)
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cracked black pepper
  • 1/2 cup Farm Boy™ Virgin Cold Prsd Sunflower Oil (1 L)

Chimichurri Yogurt Sauce:

  • 2/3 cup Farm Boy™ Organic Plain Greek Yogurt (500 g)
  • 3-4 Tbsp Farm Boy™ Chimichurri
  • salt to taste
  • sliced green onions for garnish

Directions:

  1. For the fritters: In large bowl, whisk eggs and then add corn kernels, green onions, jalapeño pepper, Farm Boy™ Fiesta Blend Shredded Cheese, and Farm Boy™ Organic Whole Milk. Mix to combine.
  2. Add flour, Farm Boy™ Cornstarch, baking powder, salt, and pepper and mix to make sure there are no dry spots.
  3. Heat a large frying pan and add enough oil to cover the bottom of the pan. Heat until it shimmers, then carefully drop heaping tablespoonfuls of batter onto hot oil. Press down so fritters are about ½” thick.
  4. Cook fritters until golden, 2-3 minutes, then flip and cook other side for another 2-3 minutes.
  5. Remove to a rack set over a sheet pan to drain. Continue until all fritters are cooked.
  6. For the yogurt sauce: Combine Farm Boy™ Organic Plain Greek Yogurt and Farm Boy™ Chimichurri in medium bowl. Add salt to taste.
  7. Garnish fritters with sliced green onions and serve with chimichurri yogurt sauce.

Chef’s Tips:

  • You can use Farm Boy™ Organic Whole Kernel Corn for this recipe, just make sure to thaw and drain thoroughly before using.
  • Use any other cheese you have on hand, like Cheddar or Havarti.
  • Instead of yogurt, you can use Farm Boy™ Sour Cream or Farm Boy™ Mayonnaise.
